It starts about half past 12 each day  - the lunchtime rush for the microwave at the tbbr office. The reason the microwave is working overtime at the moment is we've all gone a bit crazy for soup. A combination of the current freezing temperatures and our collective new year's resolution to be 'healthier' has led to this I think. There's no denying that soup really is one of the best and healthiest 'office' meals and perfect for brightening up Blue Monday. I have a habit of favouring the less healthy soup varieties, usually loaded with copious amounts of some kind of cheese (this is a particular favourite of mine, and Sophie has blogged a great one too) but I've chosen to share this one as there really is NOTHING bad in it. It's all yummy vegetable goodness guaranteed to fill you up until dinner time (or at least afternoon tea) and the lentils are a great source of protein for us herbivores.

Spicy tomato and lentil soup

You will need:

2x cans of chopped tomatoes

1 onion, diced

2x carrots, chopped

150g red lentils (I just guesstimate, no need to measure)

1litre veg stock

1 tablespoon cumin

1 teaspoon medium curry powder

There isn't much to the method - bung everything in a big saucepan, simmer gently for at least 30 minutes until it's all soft, and whizz up with a hand blender.

Freeze in portion size tupperwares and there you have it - at least a week's worth of lunches ready to go!
